Vanilla Coconut Cupcakes Recipe with Vanilla Butter-cream Frosting
1 stick of softened organic butter (1/2 cup)
3/4 Cup Sugar
2 Eggs
3/4 Cup Sugar

3 Tablespoon vanilla extract
1-1/2 cups all-purpose flour
1/2 Teaspoon baking powder
1/4 Teaspoon salt

1 Cup of Coconut Flakes
2/3 cup cold organic milk
2/3 cup cold organic milk
Directions:
Cream butter and sugar then add eggs 1 at a time, beating after each addition. Stir in vanilla.
In a separate bowl, mix together all dry ingredients. Add to butter mixture and stir in milk. Mix in coconut flakes. Bake at 350°F for about 20 minutes (depending on your oven). This will yield 12 Cupcakes.
Frosting:

1 teaspoon milk
1 teaspoon vanilla extract
dash of salt

In a bowl combine the softened butter, sugar and the salt. Mix till it's fully blended. Add the milk and the vanilla and mix until it's creamy in texture.
Have fun decorating! You can also add food color to the butter-cream frosting to make it pink or whatever color you prefer! Sprinkle cupcakes and you're all done! (I got the heart/lips sprinkles at Homegoods!)
